3 Ingredient Peanut Butter Cookies - Not Quite Mom of the Year 12

Our friends’ daughter just got engaged.  Our MUCH OLDER friends.  We used to be the same age, but somewhere along the way they aged much faster than my husband and myself. I mean, seriously, I am in no way old enough to have friends old enough to have a child old enough to be engaged!  Funny how time works in my fantasy world.

Earlier this summer we got to meet Shawna’s fiancé at her parent’s anniversary party, and I have to tell you … he’s a great guy!  Not only did he tolerate my husband and me calling him Kevin all afternoon (his real name is Jake, but we felt he looked more like a Kevin) he also baked dozens of cookies for the party.  A good sport and a good cook?  Ya got yourself a good one Shawna!

I was so impressed with the peanut butter cookies that I asked for the recipe.  Kevin laughed and said that I was going to be surprised.  You see, these delicious cookies were made with only 3 ingredients!  3 INGREDIENTS!  Definitely sounds like a Not Quite Mom of the Year recipe, right?

Okay, let’s gather those ingredients.  It will take about 20 seconds… 1 cup peanut butter, 1 cup sugar and 1 egg.  (I usually double the recipe, because my kids plow through these cookies in short order, so one batch is never enough.)  Take all the ingredients and dump into a mixing bowl.

I took a picture of this step in case you didn’t know what it meant to “dump everything into the bowl.”  I hope this clears things up.  (I seriously wonder about myself sometimes.)

Stir the ingredients until mixed thoroughly.  Spoon onto parchment lined cookie sheets.  I used my new cookie scoop.  Man, I really love this thing!  Perfectly measured cookies (or Meatballs!) every time.  It’s the little things in life that make me smile!

Now, put a little sugar in a shallow dish and dip your fork in it.  Lick off the sugar and repeat.  Okay, just kidding about that, but this would have been the coolest recipe ever if that were actually a step!  Anyway, just dip your fork, don’t lick.

Using your sugar dipped (and not licked) fork, flatten your cookies.  Make imprints HORIZONTALLY and…

VERTICALLY.  Repeat for all cookies.

I love that peanut butter cookies have a rustic look about them.  I’ve never been very good at making beautiful cookies, but I think there is something pretty about peanut butter cookies.

Bake at 350°F for 7 to 9 minutes.  This picture is really washed out (they weren’t really this light), but to be honest this batch probably could have used another couple of minutes browning up.  They were still delicious!

3 Ingredient Peanut Butter Cookies

Ingredients

  • 1 Cup Peanut Butter
  • 1 Cup Sugar
  • 1 Egg

Note

Makes about one dozen 3" cookies.

Directions

Step 1
Combine all ingredients in a bowl until thoroughly mixed.
Step 2
Spoon onto parchment lined cookie sheets.
Step 3
Using a sugar dipped fork, flatten cookies in a crisscross pattern.
Step 4
Bake at 350°F for 7 to 9 minutes
