Several years ago, I found a recipe for meatballs that was so incredibly easy that I tried it immediately and fell in love. The original recipe was from Food and Family Magazine from probably about six years ago or so, although I have adapted it somewhat since then.
There are only 4 simple ingredients, and the recipe is so easy to remember. This is how I remember it – 2/2/1/1 : 2 pounds of meat, 2 eggs, 1 cup of water, and the secret ingredient…1 box of stuffing mix! Yep, that’s right. Stuffing mix is the ingredient that makes these super simple meatballs so amazing!
The original recipe called for two pounds of ground chuck, but I have found that the type of meat I choose really depends on what recipe I am going to add the meatballs to. Ground chuck is pretty universal, but if I am making Swedish meatballs, I prefer to use 1 pound of ground chuck and 1 pound of ground sausage – preferably with sage. Ground turkey always seems better in Italian Wedding Soup. But when I am cooking Italian, I insist on 1 pound of Italian sausage with one pound of ground chuck. If I am feeling sassy…I use spicy Italian sausage!
Okay, you’ve chosen your meat and gathered you ingredients (took you a whole 10 seconds, right?) Now all you need to do is throw it all in a bowl and start mixing! Don’t be a sissy here…the only way to make proper meatballs is by getting your hands dirty!
When it is all mixed, it will look something like the picture below.
I used to roll my meatballs, until I bought one of these cookie scoops. It makes the perfect sized meatball, and once they are cooked and covered in sauce, you can’t tell the difference between hand rolled meatballs and these scooped version. I’ll take the shortcut! Bake these at 400°F for 15 minutes or until cooked through.
See how great they turned out? And you are not going to believe the taste! Until you try them, you can’t believe how good four simple ingredients can be when combined together!
These are so good just by themselves, but imagine the recipe possibilities! Just add your favorite spaghetti sauce and some pasta and you can have some amazing spaghetti and meatballs. Or, skip the pasta and add sub buns for some rockin’ meatball subs.

But most of all, my family LOVES when I make Meatballs with Orange Sauce. What is Orange Sauce, you ask? It is another recipe from Food and Family Magazine from years ago, but their recipe was more complex with more ingredients. I simplified the recipe and since I eliminated certain ingredients, the original name no longer fit the recipe. So my family began calling it Orange Sauce…but no fear… there are no oranges in this sauce! Crazy, right? No, my family has nicknamed this recipe Orange Sauce because of the color that is created when the 2 ingredients are mixed together. TWO INGREDIENTS? Yes, you read that right. I have really
outdone underdone myself this time! The two ingredients for Orange Sauce are simple…spaghetti sauce and cream cheese.
Again, until you try it you have no idea how good it is! Plus, when you serve this, no one will realize how simple it really is, unless you tell them! You could just keep it to yourself!
It doesn’t get any easier…or tastier…than this! Trust me, this will become one of your go to week night meals! Enjoy!
